I love one pot recipes for their ease and comfort. And once the cooler weather decides to stick around, I’ll start sifting through my recipe index. The truth is that I really love them because there is only ONE POT to wash! Am I right? Believe me there are days when I just love spending an afternoon in the kitchen pulling out every saute pan, sauce pan and casserole dish to make a Julia-esque meal, but more often than not, there are those days when I just want to throw everything into one pot and forget about it OR, as the saying goes, “set it and forget it”.
