The fresh and crunchy Baby Shanghai Bok Choy by Jade Asian Greens are perfect for quick kimchi or geotjori!

Quick Kimchi (Geotjori) Recipe

Geotjori, or what I like to call “quick kimchi“,  is a quick and easy side dish that goes amazingly well with Korean BBQ – grilled galbior bulgogi. But why stop there? Serve geotjori alongside any grilled meats – chicken or a nice ribeye – the next time you’re firing up the grill. We still have a few weeks of warm weather here on the Northeast.

The seasoning or dressing is similar to the spices used in cabbagekimchi. Geotjori traditionally uses young napa cabbage and I’ve even seen restaurants use red leaf lettuce. I think these Baby Shanghai Bok Choy by Jade Asian Greens work perfectly for this dish. I love the freshness and crunch of these greens. Plus, Jade Asian Greens are all triple-washed and ready to use so this dish is even quicker to put together. You can make the sauce ahead of time, just toss the sauce with the greens when you’re ready to eat. It’s best when the greens are fresh and crunchy.

I was pleasantly surprised to discover LA cut galbi at Costco a couple weeks ago! Must’ve been a special because I went back today and nada!
