Geotjori, or what I like to call “quick kimchi“, is a quick and easy side dish that goes amazingly well with Korean BBQ – grilled galbior bulgogi. But why stop there? Serve geotjori alongside any grilled meats – chicken or a nice ribeye – the next time you’re firing up the grill. We still have a few weeks of warm weather here on the Northeast.
The seasoning or dressing is similar to the spices used in cabbagekimchi. Geotjori traditionally uses young napa cabbage and I’ve even seen restaurants use red leaf lettuce.
