I’m partnering with Chung Jung One and created this recipe for Spicy Pork Belly Nachos using Chung Jung One gochujang sauce! You will also have a chance to win their Gochujang Trio!
It’s very hard for me to resist ordering loaded nachos – a messy pile of tortilla chips, melty cheese, guacamole, sour cream, salsa, jalepeno peppers, and meat! Gotta have the protein to make it a meal. Seasoned ground beef is what I typically run into, spicy pulled chicken or pork kicks it up a few levels, but today I figured I’d go over-the-top with some spicy pork belly!
So before I go into what I think about Chung Jung One gochujang sauce, let me explain what gochujang is. Gochujang sauce is a fermented red pepper paste and is a staple in the Korean kitchen. I have a 5 pound container of it in my refrigerator. I have also attempted to make a homemade version, but it will take me a lifetime to perfect the method and flavors. In the meantime, I will continue replenishing my gochujang supply with Chung Jung One. You don’t know how thrilled I am to be working with them! Not only have I been using their brand of gochujang for years, but my mom also prefers them over all other brands. Truth! The sauce is balanced, a little smoky, not too sweet, a little tang, and not overwhelmingly spicy. The texture is great – not too grainy, smooth, but with a little tooth, and it blends really easily.
Anyway. Back to the nachos!
Feel free to add more cheese if you like your nachos really cheesy. Also, the smaller you cut the pork belly, the quicker it will cook and less likely for the sauce to char. That is, the smaller the better – it’s really difficult to overcook pork belly! And feel free to add any other favorite toppings that you must have or have on hand! The green onions and Korean green peppers add a freshness and bite and just works well with the spicy pork belly, creamy avocado, the tangy sour cream sauce, and gooey cheese. These nachos are fairly easy to put together and will be a guaranteed a crowd pleaser! Make this for your next get together!
Spicy Pork Belly Nachos #Gochujangsauce
Ingredients
- 1/4 cup Chung Jung One Gochujang Sauce
- 2 tablespoons gochukaru red pepper flakes
- 1 tablepoon garlic powder
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons mirin rice wine vinegar
- 1 pound pork belly cut into 1/4-inch bite-sized chunks
- 8 ounces sour cream
- 1/4 cup Chung Jung One Spicy Ketchup Sauce
- 8-10 ounces tortilla chips
- 8 ounces or more Colby and Monterey Jack shredded cheese
- 6-8 stalks green onion thinly sliced
- 1-2 Korean green chili peppers thinly sliced
- 1 avocado diced
Instructions
- In a medium-sized bowl, mix together the gochujang sauce, gochukaru, garlic powder, soy sauce, sesame oil, and mirin. Mix until thoroughly combined. Add the pork belly chunks and mix until coated thoroughly. Cover and let sit for at least 20 minutes in the refrigerator.
- In the meantime, whisk together the sour cream and Spicy Ketchup Sauce in a small bowl. Cover and set aside in the refrigerator.
- Heat a large non-stick skillet over medium heat. Add the pork and cook until cooked through. The sauce will start to caramelize and edges will start to char. Take off the heat and set aside.
- Turn the broiler on high to preheat the oven.Adjust the rack so that it's at least 6 inches from the broiler.
- In a cast iron skillet (or a baking pan), layer half the amount of chips, then half the amount of cheese, half the amount of pork, and half the green onions. Then layer with the rest of the chips, the cheese, pork, more cheese and green onions.
- Place the skillet (or pan) into the oven and broil until the cheese melts, for about 2 minutes. Keep an eye on it, so it doesn't burn!
- Sprinkle with the green pepper slices and avocado. Add a dollop or 2 of the sour cream mixture and serve hot!
Chung Jung One has come out with 2 other flavors along with their traditional gochujang – Spicy Miso Sauce and Spicy Ketchup Sauce. The Spicy Miso Sauce can be used as a dipping sauce for vegetables, to add more flavor in your Korean jigaes or soups, or can be used for ssam. The Spicy Ketchup would be great on any burger or with fries. My dad would totally use it in his bibimbap since he prefers his bibimbap sauce a little less spicy.
