No bake desserts, like Strawberry Mochi, are the best way to feature the nutrition and sweetness of Florida strawberries!
It’s cold and blustery in the Northeast and it can only mean one thing. It is peak season for Florida strawberries! Juicy and sweet, it’s a welcome taste of summer. Strawberry season runs from December through April. Forget the imported stuff and shop and support your east coast farmers to the south. Ask your local grocers to stock these juicy red morsels from Florida. I have seen them at my local Whole Foods Market, Trader Joe’s and even Target – another reason to just “pick up something” from the big red box store.
And not only is it Florida strawberry season, it was also Lunar New Year this past Friday. The folks in Asia make it a three-day holiday so technically we are still celebrating the new year! What better way to celebrate than to make rice cakes – mochi (Japanese rice cake) or songpyun (Korea’s version). White rice cakes have traditionally signified purity and cleanliness and consuming it ensures good fortune for the year. So, eat up everyone! Strawberry mochi can be enjoyed as a light dessert or snack or even breakfast.
We’re making mochi from scratch. It is so simple to make and there is absolutely no baking involved. Florida strawberries are delicious and nutritional on their own, but we’re going to add a little classy sweetness and dip these Florida red gems in some dark chocolate. Strawberry Sue knows a thing or two about chocolate-dipped strawberries! If your friends are comfortable in the kitchen – or if you’re comfortable with others in your kitchen (I feel you) – make this a mochi-making party. Do the dipping ahead of time so the strawberries are ready to go.
Strawberry Mochi #SundaySupper
Ingredients
- 5 Florida strawberries
- ¾ cup semi-sweet chocolate chips
- Potato starch at least ½ cup
- 1 cup sweet rice flour
- ¾ cup white granulated sugar
Instructions
- Wash, drain and pat strawberries with paper towels. Cut the strawberries in half, lengthwise. Line a baking sheet pan or large plate with parchment paper.
- Place chocolate chips in a microwave-safe bowl. Heat for 30-40 seconds. Stir. Continue heating in additional 30-second intervals, stirring often. Repeat the process until the chocolate is completely melted. Dip the halved strawberries and try to cover as much as the strawberry as possible. Place the strawberries on the baking sheet and chill in a refrigerator for about 15 minutes or until firm.
- Line another sheet pan with parchment paper and spread a generous amount of potato starch, about ½ cup.
- In a medium-sized bowl, whisk together the sweet rice flour and 1 1/3 cup water until smooth.
- Place a strainer over a saucepan over medium heat. Pour the flour mixture through the strainer and use a rubber spatula or the whisk to push the mixture through.
- Add the sugar and mix thoroughly. Stir constantly until the mixture thickens to the point that it can hold its shape, about 5-6 minutes.
- Scrape the sticky dough onto the parchment paper. Dust the dough liberally with potato starch. Cut into 10 even pieces. Dust your fingers with the potato starch and flatten the pieces into discs, about 2-inches by 2-inches and about 1/4-inch thick.
- Place one chocolate covered berry in the center of the disc. Carefully stretch the dough up and around the strawberry and pinch the dough at the top and seal. Set on a platter lined with parchment paper dusted with potato starch, seam-side down.
- Let the mochi come to room temperature so the chocolate can meld with the dough.
