Thai curry is my go-to dish when I’m crunched for time and craving something packed with flavor. I love all the flavors in this recipe for Thai Green Curry with Chicken and Snow Pea Shoots – the light tanginess from the curry, the nutty coconut milk, and the fresh green flavor from the snow pea shoots (that is, if a color could have a flavor). I made Thai curries quite often when I was in the throes of #Whole30 and this dish would not be an exception. To make it Whole 30 compliant, read your labels and make sure the curry paste and fish sauce that you use has no added sugar.
Feel free to substitute or add vegetables. Use golden potatoes for the sweet potatoes or add sliced eggplant and mushrooms.
