A good friend and I used to live across the street from a small French bistro. It was practically an annex to our apartment. Moules marniere, steak frites, and martinis were a regular part of our diet, and living on the top floor of a 5-floor walk-up (a.k.a. a 5-story apartment building with no elevator) was part of our healthy living plan.
Moules marniere is a quintessential French dish. It is essentially composed of mussels steamed in a mixture of wine, shallots, parsley, and garlic. Plenty of crusty fresh baguette is requisite to soak up the best part of the dish – the salty, wine-y, herb-y broth.
This dish is also perfect for entertaining. Minimal time is spent in the kitchen which means more time with your guests! This dish is VERY EASY to make and Gourmet Garden makes it even easier! GG Herbs & Spices are used like fresh herbs in a one-to-one ratio, but can also be used in place of dried typically in a 2 to 1 ratio. For example, 2 tablespoons of GG Ginger equals 1 tablespoon of dried ginger.
I put an Asian twist on this French classic. There are a lot of herbs in this recipe and while I always try to keep in mind “fresh is best”; sometimes “fresh” is not the best when you use about a sixteenth of the bunch you have to buy and the rest quickly transforms into drippy black goo at the bottom of the vegetable drawer in the refrigerator. Ingredients
- 2 Tablespoons Gourmet Garden Garlic
- 2 teaspoons Gourmet Garden Chili Pepper
- 1 Tablespoon Gourmet Garden Lemongrass
- 1 teaspoon Gourmet Garden Ginger
- Cooking oil
- 4 stalks scallions sliced finely crosswise
- 1/2 cup dry white wine
- 1 5- ounce can of coconut milk
- 1 Tablespoon fish sauce
- 1 Tablespoon Gourmet Garden Cilantro
- 2 pounds mussels washed and debearded
- 1 lime
Instructions
- In a small bowl, mix together chili, lemongrass, garlic, and ginger pastes.
- Heat a couple of tablespoons of cooking oil in a large pot over medium heat. Add green onions and cook until a vibrant green, about 1 minute. Add the paste mixture and cook until fragrant, about 30 seconds.
- Quickly add wine, coconut milk, fish sauce, and cilantro. Raise the heat to medium high, and bring the mixture to a boil. Add mussels, cover the pot, and let cook until mussels start opening up, about 2-3 minutes.
- Squeeze a bit of fresh lime juice over the mussels and stir!
- Make sure to have a loaf or two of crusty baguette or bâtard to sop up the delicious broth!
