Thursday Three – Almost back to normal…

We’re back into the rhythm of our routines, I’m cooking again, and Thursday Three is back. 

1 – Thanksgiving Dinner

Exactly 7 days until Thanksgiving Day. I think about the menu, oh about, 364 days before the big day. Recently, I’ve been toying with the idea of straying from the standard turkey-gravy-stuffing-potatoes menu. I know, blasphemy. Believe me, I’ve always had the whole turkey thing growing up, but this year I’m feeling a little crazy. 🙂 This is what I’ve been thinking (obsessing) about…

1 – kalbi jjim (Korean braised short ribs)
2 – jap chae (Korean Beef and Vegetable Noodles)
3 – saengsun jun (fried fish)
4 – gosari (seasoned fern bracken)
5 – oi muchim (seasoned cucumbers)
6 – moo saeng chae (seasoned radish salad)

and of course…

7 – kimchi

Usually, the menu is a mix of American and Korean dishes, but I’m going 100% Korean this year with kalbi jjim playing the starring role. And the leftovers will be perfect for bibim bap!

2 – #SundaySupper Thanksgiving Leftovers

And with a big holiday dinner comes lots of leftovers! This #SundaySupper will feature recipes using leftovers from Thanksgiving (or any big holiday) meal! It will be hosted by none other than Isabel of Family Foodie. Here’s a sneak peek at my curried leftover turkey salad on a bed of baby kale.

3 – Giving Thanks

We tried to make an effort to get all the little cousins together, but this year we’re all spread out. There is so much to be thankful for, not just this day, but everyday. But since we’re on the topic, I’m especially thankful for my family, friends (IRL and online), good health, and especially thankful that the roof over our head didn’t blow away during Hurricane Sandy. A special BIG HUGE THANK YOU to my dear friend KB and family for opening up their home to us during the power outage. And a THANK YOU HUG to my in-laws for taking us in as “refugees” amid their busy schedule. We are so lucky to have family close by.

We had lunch at one of our favorite Japanese resta We had lunch at one of our favorite Japanese restaurants today - @ootoyanyc. 🍱 Ordered the special and got to taste a little bit of everything - salmon sushi, soba with uni, grilled butter fish with hijiki salad, homemade tofu with ikura, and tonkatsu. Hello weekend! Upon the request of my dear daughte Hello weekend! Upon the request of my dear daughter, we had kimchi jigae. No tofu in the house so we made do without it and added extra pork belly. 🐷 Kimchi was perfectly ripe and I was able to use leftover galbi tang broth that I had in the freezer. KBBQ for dinner! Ssam with galbi! 🥬This meal is KBBQ for dinner! Ssam with galbi! 🥬This meal is so easy to make and the kids love it. I was pleasantly surprised to discover LA cut galbi at Costco a couple weeks ago! Must’ve been a special because I went back today and nada! Anyway grilled the beef I marinated, made ssamjang, washed the lettuce and BOOM, DINNER! It was also our first meal alfresco this year!
