Halloween is not just for kids! I am sharing my ghoulish Vampire Collins Cocktail recipe for my blood thirsty vampires!

Vampire Collins Cocktail #SundaySupper

To say that our little town gets into Halloween is an understatement. As soon as it turns October 1st,  many of the cute colonials and Tudor style houses are transformed overnight. I’m going to attribute it to the high concentration of residents who are in the creative and entertainment industries!

Our town is the town people will drive to from nearby to check out the ghoulish spectacles. Many are simple and playful and many more are very elaborate and involved.

Some neighbors offer snacks and hot cider for the adults as candy is divvied out for the trick or treaters. And there is always, always, always a Halloween after-party to be found. It’s an opportunity for adults to warm up and relax while the kids swap their treats. Halloween truly brings our community together!

Sunday Supper tastemakers and Dixie Crystals are sharing their recipes for sweet treats for Halloween. Today I’ve turned Tom Collins into a vampire and have created this bloody cocktail for your enjoyment once the sun goes down. You can make this kid-friendly and nonalcoholic by omitting the gin and adding lemonade.

Cheers and have a bloody fun Halloween!

Halloween is not just for kids! I am sharing my ghoulish Vampire Collins Cocktail recipe for my blood thirsty vampires! If you like a tart with a little sweetness, this is for you!

Ingredients

  • 10 ounces frozen raspberries
  • ¾ Dixie Crystals granulated white sugar
  • ½ cup water
  • 2 ounces gin
  • 0.5 ounce or more raspberry syrup
  • 1 ounce fresh lemon juice
  • Club soda

Instructions

  • In a small saucepan over medium-high heat, mix together the raspberries, Dixie Crystals sugar, and water. Bring to a high simmer. Stir and let cook for about 5 minutes when the mixture turns a deep red. Take off the heat and let stand for 15 minutes.
  • Place a fine-mesh sieve or strainer over a bowl and strain the raspberry mixture. Gently press the mixture to strain all the liquid. Discard the solids and seeds. Set aside and let cool. Pour into a clean jar and store in the refrigerator.
  • Once the syrup has cooled, take a food-safe plastic syringe, and fill the syringe to about 1/2 to 3/4 ounce.
  • In a cocktail shaker filled with ice, add the gin and lemon juice and give it a few shakes. Strain into a highball glass filled with ice. Top off with club soda. Place the “blood-filled” syringe in the glass and serve.
