Vampire Collins Cocktail #SundaySupper

Halloween is not just for kids! I am sharing my ghoulish Vampire Collins Cocktail recipe for my blood thirsty vampires! If you like a tart with a little sweetness, this is for you!

Ingredients

  • 10 ounces frozen raspberries
  • ¾ Dixie Crystals granulated white sugar
  • ½ cup water
  • 2 ounces gin
  • 0.5 ounce or more raspberry syrup
  • 1 ounce fresh lemon juice
  • Club soda

Instructions

  • In a small saucepan over medium-high heat, mix together the raspberries, Dixie Crystals sugar, and water. Bring to a high simmer. Stir and let cook for about 5 minutes when the mixture turns a deep red. Take off the heat and let stand for 15 minutes.
  • Place a fine-mesh sieve or strainer over a bowl and strain the raspberry mixture. Gently press the mixture to strain all the liquid. Discard the solids and seeds. Set aside and let cool. Pour into a clean jar and store in the refrigerator.
  • Once the syrup has cooled, take a food-safe plastic syringe, and fill the syringe to about 1/2 to 3/4 ounce.
  • In a cocktail shaker filled with ice, add the gin and lemon juice and give it a few shakes. Strain into a highball glass filled with ice. Top off with club soda. Place the “blood-filled” syringe in the glass and serve.
