#SundaySupper is on a Mission to bring back Sunday supper around the family table in every home. Amber over at Mama’s Blissful Bites is hosting this week’s #SundaySupper . This Sunday’s theme is “Dishes in 5 Ingredients or Less” (exlcuding salt, pepper, water, and cooking fat). You don’t need a lot of ingredients to have a delicious meal!
Have you ever had one of those days where you stare blankly into your pantry or refrigerator? And then those days when you just couldn’t get to the market? Or how about those days when you just don’t want to cook.
So that triple whammy totally hit me this past weekend. I actually had a great night out with some girlfriends Saturday evening. Suffice it to say, recovery was not as easy as it was in the days of my youth. And unlike the days of my youth, I have little ones who could care less that I was out late. I was lucky to sleep in a little on Sunday morning, but lunch clearly wasn’t going to make itself.
Here’s a quick tasty snack or side dish. Crispy on the outside and a little chewy on the inside. It’s great on its own or you can serve it with a side of soy sauce dipping sauce. Pa literally means scallions and jun is translated as pancake. Pa jun…scallion pancake. There you go!
Pa Jun or Korean Scallion Pancakes
Serves 3-4 people or 2 large pancakes
8 green onions, sliced thinly on a diagonal
1 cup flour
1 teaspoon salt
1/8 teaspoon black pepper
1 Tablespoon garlic powder
1 teaspoon sugar
1 to 1 1/2 cup ice water
cooking oil
1 – Mix together flour, salt, pepper, garlic powder, sugar. I like to use a large measuring cup. If you don’t have one, just use a medium-sized mixing bowl. Whisk in the ice water until the batter is the consistency of a thick batter. Too soupy is too thin.
2 – Heat a few tablespoons of cooking oil in a large non-stick skillet over medium-high heat. Have the onions and batter in place (mise en place) because you will need to work quickly.
3 – Once the oil is hot and shimmery, throw in half of the sliced green onions. Try to distribute it evenly in the pan. Immediately pour half the batter over the onions. Let cook for about 3-4 minutes or until the edges get a little crispy and browned.
4 – With a large spatula, carefully flip the pancake and let cook for another 2-3 minutes or until browned. Add a smidge more oil if it gets too dry.
5 – Slide the pancake onto a cutting board. Set aside.
6 – Repeat with the remaining onions and batter.
7 – Cut into bite size pieces and serve. You can eat it alone or serve it with a simple dipping sauce of 2 parts soy sauce to 1 part white vinegar.
