Truth be told, there will be weekends where you will find me in the kitchen making some elaborate dish, breaking down chickens, or making stock. Needless to say, I love spending hours in the kitchen. But those long relaxing afternoons where I’m babysitting a stew or waiting for the bread to rise only happen a few days a month. Allow me to let you in on a secret…there are weekends when I don’t want to do ANYTHING. Weekends where I’m so beat down from the week that I just want to melt into the sofa. But just because I feel that way, doesn’t mean that I don’t want to sit down to a special meal. You know, a meal that’s a few notches above the weekday fare of fried rice, reheated leftovers, or stir fried chicken.
This recipe is apropos for those weekends (or any other day) that call for something fancy and special. And the bonus? This dish can be done in less than 30 minutes and the effort is minimal. The cod is meaty. The peas, either snow peas or sugar snap peas, add a nice crunch and sweetness that perfectly compliment the tang and heat from the Lemon Pepper Sauté Express® Sauté Starter. The scallions and ginger are also a great vehicle for the buttery lemony pepper flavors. Yeah, it’s that good.
Notes: These Sauté Express® Sauté Starter squares burst with flavor. You definitely do not need additional seasoning. Also, they have a low smoke point, so it’s imperative to cook with medium or low heat. This recipe does not shy away from spiciness. The pepper and ginger give it a lot of heat and bite.
Cod Fillet with Lemon Pepper Ginger Sauce
Makes 2 servings
2 cod fillets, each about 3-4 ounces and about 1-inch thick
2 squares of Land O Lakes® Lemon Pepper Sauté Express® Sauté Starter
1 Tablespoon minced ginger
1/2 cup of finely chopped scallions, about 2-3 stalks
4 ounces sugar snap peas or snow peas
1 – Melt the Land O Lakes® Lemon Pepper Sauté Express® Sauté Starter in a 10-inch skillet over medium-low heat.
2 – Once the butter starts to bubble, add ginger and scallions. Heat through for about 10 seconds.
3 – Add fillets to the skillet. Cook the first side for about 3-4 minutes. Flip and cook fish for an additional 3-4 minutes or until the fish starts to flake.
4 – Remove the fish and set aside. Immediately, add peas to the skillet and cook for 2 minutes. (If you’re using snow peas, cook them for about 1 minute.)
5 – Spoon half of ginger scallion sauce and peas over each cod fillet.
