Happy three years!

I’ve been plodding along for the past 3 years and it’s been such an adventure. This blog started out with a generic title What’s for Dinner? on Blogger and has evolved into Kimchi Mom. It’s funny, before I started this blog, I had not read one food blog or any blog for that matter, but I decided to start documenting my mom’s recipes. So I opened an account and started “talking to myself” on Blogger. I took photos with my trusty Canon PowerShot and took awesome dimly-lit close-ups.

Little did I know that I had opened a door to a whole new world and there was no turning back. Eventually I was bombarded with things such as ISO, SEO, captcha, plugins, copyright, pageviews, bounce rates, tweets, f-stop, #hashtag, CSS, RSS, XML, and the list goes on. It was overwhelming, intimidating, never ending and exciting. I’ve gotten to know and embraced some of these terms, but I’ve also let others slide. I just got a fancy new camera last December and and my photos are getting a wee bit better. So yes, I’ve been plodding along and am grateful for my modest following who have stuck by Kimchi Mom. So what have I learned? Most importantly, my blog has taught me to be more open – both on and offline. This has been the biggest challenge as a blogger since I consider myself a very private person.  By being more open I have been able to connect with so many of you.

One of the first recipes I wrote about was Giada’s eggplant timbale. I still make this dish every now and then, and more often during the fall and winter. I have fun assembling this dish with all the layers of eggplant slices. I thought it’d be a hoot if I made this again and retake some photos. Let’s see a “then and now”, shall we?

Hello weekend! Upon the request of my dear daughte Hello weekend! Upon the request of my dear daughter, we had kimchi jigae. No tofu in the house so we made do without it and added extra pork belly. 🐷 Kimchi was perfectly ripe and I was able to use leftover galbi tang broth that I had in the freezer. KBBQ for dinner! Ssam with galbi! 🥬This meal is KBBQ for dinner! Ssam with galbi! 🥬This meal is so easy to make and the kids love it. I was pleasantly surprised to discover LA cut galbi at Costco a couple weeks ago! Must’ve been a special because I went back today and nada! Anyway grilled the beef I marinated, made ssamjang, washed the lettuce and BOOM, DINNER! It was also our first meal alfresco this year!
