I never thought I would start my own blog, but here I am with the rest of you. There are a few things that inspired to embark on this new venture. My parents who were staying with us to help take care of the kids left earlier this week. By some freakish coincidence, I got laid off the week before their departure. While my parents were here, my mom took over the kitchen and had dinner ready for us every night! It was a luxury and my DS was so well fed and happy, as well as my DH! I figured with my new role, I would try to maintain health and happiness in this household! I’m sure there are millions of people out there who would think that this is such a pathetic endeavor, but hopefully many more who are in my shoes.
(Inhale) Here we go…
Monday – First night without the grandparents. We had the Barilla Plus spaghetti with store bought Rocket (arugula) pesto. I also had an 8 oz. ribeye. We also had a fresh mozzarella and tomato salad drizzled with olive oil and balsamic vinegar. My DS did not like the pesto and settled on eating a bowlful of Pirate’s Booty. Ugh, I failed with DS.
Tuesday – I found a Ziploc bag full of breaded fish (jun) in the freezer. I pan fried those, made some rice that turned out too dry, and prepared some oi muchim (cukes Korean-style). DS had seconds. DH did not like it AT ALL. I thought those rice cookers were fail-safe!
Wednesday – DH was not home for dinner. I dropped by Peasant Pies and bought two pies; one for DS and one for me. Also, I roasted yams before picking up DS. I followed a recipe for Butter-Pecan Sweet Potatoes from the November 2004 issue of Everyday Food, but substituted yams for the sweet potatoes, omitted pecans (since I didn’t have any), and used white sugar instead of brown sugar. It turned out fine. I did make the mistake of adding a bit of cayenne pepper. DS suffered some “owies” that night, but had seconds nevertheless.
I don’t know where this blog will go. I seriously wonder who would be interested in a blog about family dinners…
