- 1 cup Pompeian robust extra virgin olive oil
- 1/3 cup Pompeian organic apple cider vinegar
- 2 tsp dried oregano

Combine all ingredients, except the beef, in a blender. Secure with lid and puree until smooth. Reserve ¾ cup of the cilantro mixture, cover and refrigerate until needed.
Place beef in a large zip-top plastic bag. Pour remaining cilantro mixture over beef, seal bag and toss back and forth until well-coated. Refrigerate overnight or at least 4 hours.
Remove beef from marinade, discarding marinade in bag. Heat a grill or grill pan over medium-high heat. Cook beef 4-5 minutes on each side or to desired doneness. Place on cutting board, let stand 3 minutes before slicing against the grain. Serve with reserved sauce
