Ingredients

  • 1 tablespoon sugar
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon cayenne
  • pinch of salt
  • 1 15 oz. frozen package of plain sweet potato julienne fries I prefer the Alexia brand!
  • 2 teaspoons + about ¼ cup of good maple syrup not the Aunt Jemima type
  • 1/2 cup heavy whipping cream

Instructions

  • In a small bowl, mix together the sugar, cinnamon, cayenne, and salt. Set aside.
  • Prepare the fries as directed on the package.
  • In a large bowl, toss the fries with the sugar mixture while the fries are still hot. Set aside.
  • In a medium-sized bowl, whisk together 1 tablespoon of heavy cream with 2 teaspoons of maple syrup. With a hand mixer on low-speed, gradually whisk in the remaining heavy cream. Increase speed on the mixer and whisk until soft peaks form.
  • Plate the fries on a platter. Spoon the cream on top of the fries and drizzle with remaining maple syrup.
