In a small bowl, mix together the sugar, cinnamon, cayenne, and salt. Set aside.
Prepare the fries as directed on the package.
In a large bowl, toss the fries with the sugar mixture while the fries are still hot. Set aside.
In a medium-sized bowl, whisk together 1 tablespoon of heavy cream with 2 teaspoons of maple syrup. With a hand mixer on low-speed, gradually whisk in the remaining heavy cream. Increase speed on the mixer and whisk until soft peaks form.
Plate the fries on a platter. Spoon the cream on top of the fries and drizzle with remaining maple syrup.
