Crunchy Curry Chickpeas

Ingredients

  • 1 15- ounce can chickpeas garbanzo beans
  • 1 1/2 Tablespoons grapeseed oil
  • 1 1/2 teaspoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder

Instructions

  • Preheat oven to 375 degrees.
  • Drain the chickpeas in a strainer and rinse thoroughly under running water.
  • Blot dry with paper towels. Set aside.
  • In a medium bowl, whisk together the remaining ingredients.
  • Add chickpeas and mix until evenly coated.
  • Line rimmed baking sheet with parchment paper and spread chickpeas on the pan.
  • Roast for about 50-55 minutes until browned. Give the chickpeas a stir midway through.
  • Cool before eating.
