Spicy Seafood Noodle Soup (Jjamppong) #SundaySupper

Susan at The Girl in the Little Red Kitchen is hosting A Soul Warming #SundaySupper on November 4th. These are dishes that we turn to to keep us warm during the cooler fall and winter season. Hurricane Sandy has left us without power and heat this week. I can’t wait to get our power back to start trying some of these recipes!

Jjamppong is a spicy Korean-Chinese noodle soup. Korean-Chinese, you ask? Yes, dishes like tang soo yook (sweet-and-sour pork) or jjang jjang myun (noodles with black bean sauce) or kkang pung saewoo (spicy fried shrimp) to name a few examples. Obviously there’s some influence from Korea’s neighbor on its northwest border, China. The first time I had jjamppong was in a small restaurant in a strip mall in Maryland just north of D.C. with my brother. A fellow diner was slurping a huge bowlful of this soup and I wanted the same. Wow. I quickly became a fan. Simple, flavorful, and satisfying.

The noodles can be found in the frozen section of your local Korean market and is labeled as kalguksu or noodles for jjang jjang myun. You can also substitute pasta such as linguine fini if an Asian market is not readily accessible. This soup is also known as the “Hangover Soup”. The heat is a slow gradually burn and before you know it, you’ve sweat out all the “impurities” from the night before. After a bowlful of this soup, you’re alert, awake , and ready to go!

I made this soup for the first time this past weekend and was surprised at how easy it was to make. I enjoyed this soup for 3 days straight! The shrimp and squid makes for a nuanced and flavorful broth. A few notes – make sure you have all the ingredients ready and in place because you have to work quickly. This soup is traditionally made with pork loin, but I substituted chicken thighs. I also substituted baby bok choy for Napa this time around since my local Whole Foods was out of Napa cabbage.

Spicy Seafood Noodle Soup (Jjamppong)

2 generous servings or 3-4 “normal” servings

14 ounces kalguksu noodles, linguine fini is a good substitute

1/4 cup olive oil
2 Tablespoon kochugaru (red pepper powder), more for more heat
6 ounces chicken thighs (about 2 skinless boneless thighs), thinly sliced

2 Tablespoon minced garlic (about 2-3 cloves)
1 Tablespoon minced ginger
2 ounces baby spinach
8 ounces Napa cabbage or bok choy, sliced thinly crosswise
2 ounces carrot julienned (about 1 small carrot)
2 scallions, cut into 2-inch sections
7 shiitake mushrooms, cut thinly (about 3 ounces)
2 squids, cleaned and cut crosswise
8-10 shrimp, cleaned and deveined
6 cups water
1 teaspoon salt (or more for taste)

1 – Prepare noodles as per package instructions on the package. Portion a mound of noodles in a large soup bowl.

2 – Heat wok over high heat. The wok is ready when drops of water dance across the pan and evaporate quickly.

3 – Add oil, red pepper powder, and chicken. Cook until chicken is cooked through.

4 – Add garlic, ginger, spinach, cabbage, carrot, scallions, mushrooms. Cook until tender, about 30 seconds. Add shrimp and squid. Cook for about another 30 seconds.

5 – Add water and salt. Bring to a boil.

6 – Ladle even portions of soup, seafood, and vegetables among each  bowl.

7 – Serve hot and enjoy.

    I’m loving all these seafood soup inspiration this week. I think the only seafood soup I have ever had is clam chowder, but this looks awesome with the shrimp and squid!

    Absolutely stunning. I can’t stop staring at the shrimp and the steam coming from the bowl. I feel warmer just by looking at it 🙂 I’m loving the ingredients. I can totally see why you love it!
